Fresh Tomato Basil Soup

With the basil starting to bush up and the fresh tomatoes starting to arrive, this just seemed like a no-brainer!!
I had made basil pesto in my Pampered Chef Deluxe Cooking Blender and no matter how hard you try, it is hard to get every last bit off the bottom. So….because I was not about to let this go to waste, I decided to make soup in the blender, putting that last little bit to a great use!!

Tomato Basil Parmesan Soup

Equipment
- 1 Pampered Chef Deluxe Cooking Blender Not necessary – can be done on stove
Ingredients
- 8 large tomatoes
- 1/2 cup basil, fresh
- 4 cloves garlic, fresh
- 2 tsp salt
- .5 cup water or broth Not necessary if tomatoes are frozen or canned, using the juice that comes with
- .25 cup oregano, fresh or 2 tsp dried
- 1 tsp onion powder or to taste
- .5 tsp black pepper fresh ground, if possible
At end of cooking cycle:
- 1 cup half and half cream
- 2 tbsp butter
- .5 cup parmesan, grated or to taste
Instructions
- Add first group of ingredients to PC Deluxe Cooking Blender, cutting tomatoes in quarters. Set to 'Soup" setting
- When cycle is finished, quickly add butter, parmesan, and cream and pulse until blended
- Serve. Can be garnished with more pesto, pumpkin seeds, and more butter.
